With its distinctive wrinkly rind, subtle orange hue and rich, creamy flavour, Langres is definitely up there with the best washed-rind cheeses. We love it because there are so many things that go into its appearance and flavour to create a truly unique cheese.

Langres cheese

Langres is a soft washed-rind cheese from the Champagne-Ardennes region of France. The cheese made in the area surrounding the city of the same name, which is a picturesque, medieval walled city. 

The distinctive appearance of Langres comes from a combination of washing the rind regularly in either a brine solution or the local Marc and the addition of geotrichum Candidum during the cheese making process. The washing provides the colour and the geotrichum Candidum the distinctive, wrinkly appearance. To round off the aesthetics, each Langres has a dimple in the top which can be filled with Champagne or Marc and allowed to soak into the cheese if the mood takes you.
